Well, I've been pondering this question for quite some time. Whenever a DK sport game is discussed, a boxing game always comes to mind. There have been several clues that lead me to think one is not unlikely from happening.
1: The Boxing glove DK uses as his bat in both Mario Baseball games.
2: The very punch-out-esque Kong Boss Battles in both Jungle Beat games, and finally
3: Donkey Kong is indeed in the new Punch-Out game.

The third one is especially suspect, seeing as Mario was the referee in the original Punch-Out, and yet he makes no appearance whatsoever in the new one. This leads me to believe that perhaps they are working on a Donkey Kong Boxing game for the Wii similar to Punch-Out, but likely to take a more multiplayer orientation to it.

Do you think this is likely or not, and either way, what do you think/want it to be like?

4. The final boss in DK64 was K.Rool dressed as a boxer in a boxing ring.

Yes, thanks for that example I missed. Do you have an opinion on the topic though?

Well, if it were executed well, made unique from other boxing games, and had a DKC-esque feel to it, I'd like it. There'd have to be more than just a boxing ring, though. Maybe DK's treehouse, Cranky's Cabin, K. Kruiser II, Gangplank Galleon, etc.

I don't have anything particularly meaningful to add here just now, I just want to say that it would be awesome to punch a Krusha into a palm tree, and watch coconuts rain down on his head.

Yes, DK has punched people before. What I'm asking is what you would think of a DK boxing game, not how many references to boxing in DK games you can come up with.
